1 pkgbrown rice, quick-cooking Spanish-style, uncooked

1 mdsquash, fresh

1 mdbell pepper, chopped

1 lbstewed tomatoes
How To Make spanish squash casserole

1Mix all ingredients in an oiled 9 x 13 baking dish; cover tightly with aluminum foil or tight fitting baking dish lid.

2Bake for 30 minutes at 350 or until squash is tender.

3NOTE: May substitute 4 fresh tomatoes for stewed tomatoes, if desired.
