Ingredients For southern squash w/attitude

1 1/2 lbsummer squash, diced (zucchini & yellow squash)

1medium onion, chopped

2 Tbspbutter
-
1(4oz) can diced green chilies, optional

2-3 Tbspall purpose flour
-
1 tsptsp sea salt
-
1/2 tspground black pepper
-
1 1/2 cshedded monterey jack cheese
-
1egg
-
1 ccottage cheese
-
2 Tbspchopped parsley
-
1 Tbspchopped chives - optional
-
1/2 cgrated parmesan cheese
- NOTE:

i have used a combination of pepper jack, cheddar and monterey, with great results
How To Make southern squash w/attitude
-
1Place squash, onion and butter in a big enough saucepan and saute until tender; but still crisp. Fold in chilies, flour, salt and pepper. Place in a greased 2-quart baking dish; sprinkle with Monterey cheese. Combine egg, cottage cheese, parsley and chives. Layer over Monterey cheese, sprinkle with Parmesan. Bake uncovered at 400 degrees for 25-30 minutes until heated through.
