I love pickled beets, but don't always have time to roast the beets first. So I came up w/ this easy recipe. They are very yummy.

Ingredients For so easy pickled beets

  • 1/4 c
    sugar
  • 1 Tbsp
    cornstarch
  • 1/2 tsp
    salt
  • 1/4 c
    white vinegar
  • 1/4 c
    water
  • 2
    15 oz cans or jars sliced beets, drained well.
  • 1 Tbsp
    onion, diced
  • 1 Tbsp
    butter

How To Make so easy pickled beets

    In medium saucepan, combine sugar, cornstarch, salt, vinegar and water, place over medium heat. Stir until smooth.

    Bring to a boil, stirring, until thickened. Add beets and onion. Simmer on low 10 mins. Add butter, stir until melted.

    Let cool. Pour into a lg jar or bowl. Refrigerate until serving.
