Ingredients For smothered okra or (okra gumbo )

1/216 oz. package frozen okra ,cut up

8 ozfresh mushrooms ,sliced

114 oz.can diced tomatoes with juice

16 oz. can tomato paste

1 tspfile powder
-
2bay leaves
-
1 tspsalt
-
1 tspground blk pepper
-
2 Tbspvegetable oil

1 Tbspvegetable oil

2 Tbspflour
-
1 clovegarlic, minced
-
1 mdonion, finely chopped
-
1 mdbell pepper, finely chopped

cooked rice
How To Make smothered okra or (okra gumbo )

1heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.

2heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.

3spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice
