I just love red potatos smashed. Heres a low carb method useing cauliflower. Ive been having fun useing cauliflower in place of potatos and other starches.

1head cauliflower

1/4 cmonteryjack cheese or favorite cheese

dried parsley
How To Make smash cauliflower buttons

1Preheat oven to 400. Break cauliflower into florets. Spray baking sheet with cooking spray and lay out florets, s&p. Bake for 20-25 min.

2Take cauliflower off baking sheet and smash each floret, Back on baking sheet. Place shredded cheese on each floret, sprinkle with parsley.

3Place baking sheet back into 425 oven for 10-12 min. till cheese nice and bubbly. Serve with favorite protein, for a healthy low carb dinner. Feel free to change up with different cheeses and spices.
