simply good relish salad

I have made this relish salad for many years. It is tasty and very versatile - it can be used as a side dish, as a relish along side plain meats, I have even added it to tacos! I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish. I hope you like it, too!

Ingredients For simply good relish salad

1/2 ctomato, chopped

1/2 cred bell pepper, chopped

1/2 cgreen bell pepper, chopped

1 smjalapeno pepper, seeded and finely minced (optional)

1/2 cradishes, thinly sliced (or chopped red onion)

1/2 ccucumber, pared and chopped
-
1 and 1/2 Tbsplemon juice
-
3 tspolive oil
-
salt and pepper to taste

2 Tbspchopped fresh parsley
How To Make simply good relish salad

1In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.

2Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
