This is really a good tender crisp quick slaw, for those days when you just want a quick salad. I served this with my “Italian compound butter" baked tilapia and sweet potato fries. The compound butter is posted on here. . “Italian’O butter”.

Ingredients For simple summer slaw

  • 1 – 16 ounce bag slaw
  • 1 - 12 ounce can frozen unsweetened apple juice
  • 4 ounces sour cream “ with the liquid drained out”
  • 3 teaspoons white sugar
  • 4 teaspoons mayo
  • ½ to 1 teaspoon french’s yellow mustard “depending on your taste”
  • salt & pepper

How To Make simple summer slaw

    Cook the apple juice till you have about 3 tablespoons. It will get really thick. Let this cool completely.

    Put the slaw in a large bowl.

    Pour the thickened apple sauce over the slaw and toss to coat. Not all of the slaw will be coated at this time, but you’ll want to leave it covered on the counter for about 15 minutes.

    Toss again and refrigerate for about 2 hours.

    After that time drain the slaw in a strainer making sure all the liquid has drained out.

    In the same bowl you had the slaw in mix the sour cream, sugar, mayo and mustard. Add the slaw into this mixture and toss to coat.

    Transfer to a clean bowl and refrigerate.

    When you are ready to serve, season with sea salt and fresh ground pepper to taste.
