simple summer slaw

This is really a good tender crisp quick slaw, for those days when you just want a quick salad. I served this with my “Italian compound butter" baked tilapia and sweet potato fries. The compound butter is posted on here. . “Italian’O butter”.

How To Make simple summer slaw
-
1Cook the apple juice till you have about 3 tablespoons. It will get really thick. Let this cool completely.
-
2Put the slaw in a large bowl.
-
3Pour the thickened apple sauce over the slaw and toss to coat. Not all of the slaw will be coated at this time, but you’ll want to leave it covered on the counter for about 15 minutes.
-
4Toss again and refrigerate for about 2 hours.
-
5After that time drain the slaw in a strainer making sure all the liquid has drained out.
-
6In the same bowl you had the slaw in mix the sour cream, sugar, mayo and mustard. Add the slaw into this mixture and toss to coat.
-
7Transfer to a clean bowl and refrigerate.
-
8When you are ready to serve, season with sea salt and fresh ground pepper to taste.
