Ingredients For simmered summer squash

  • 2 lb
    yellow squash
  • 1 pkg
    andouille
  • 1/4 lb
    country ham pieces, chopped
  • 1 md
    onion, chopped
  • 3 md
    garlic cloves, minced
  • 1 tsp
    crushed red pepper
  • salt and pepper to taste

How To Make simmered summer squash

    Cut sausage on in small chunks
  • 2
    Cut squash 1/2 inch slices
  • 3
    In a large skillet, fry sausage and country ham until browned
  • 4
    Add onion, garlic, red pepper. Sautee for about 1 minute
  • 5
    Add squash. Cover and simmer for about 15 minutes. No peaking.

    Uncover, add salt and pepper, mix gingerly and serve.
