Silver Queen Corn usually is available mid to late summer. It is especially sweet and delicious. If you don't have a food processor, when you are cutting the corn off the cob do it in 2 layers...more work, but creates the same chop of corn. The one hour of draining time is not included in prep time.

3 cfresh cut silver queen corn (about 3 ears, maybe 4)

3 cwhipping cream

6 lgeggs, beaten

1/2 csugar

1 tspall-purpose flour

1/2 tspbaking powder

1 tspsalt

2 tspbutter, melted
How To Make silver queen corn pudding

1Position the knife blade in a food processor bowl; add corn. Pulse until finely chopped. Place in a colander. Drain for 1 hour.

2Combine the corn and the remaining ingredients; stir well. Pour the corn mixture into an ungreased 2 quart casserole.

3Bake, uncovered, at 325 degrees F for 1 hour and 45 minutes or until set. Let stand for 10 minutes before serving.
