side essentials: yummy cauliflower taters

First off, if you look at the ingredients, I am not making these taters to be some health food, I created it to give people a different approach to a potato-like side dish. Well, much to my surprise, I found out that mashed cauliflower really does a brilliant job of replacing mashed potatoes. So, you ready… Let’s get into the kitchen.

Ingredients For side essentials: yummy cauliflower taters

  • PLAN/PURCHASE
  • 12 oz
    cauliflower, just the heads
  • 1/4 c
    chicken stock, or water
  • 4 Tbsp
    sweet butter, unsalted, divided
  • 1/4 c
    sour cream
  • 3 Tbsp
    half & half
  • 1/4 c
    parmesan romano cheese, freshly grated
  • 2 clove
    baked garlic, smashed
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste

How To Make side essentials: yummy cauliflower taters

    PREP/PREPARE

    Gather your Ingredients (mise en place).
  • 3
    Take the cauliflower heads, and place into a food processor, fitted with an S-Blade. Then give them a few 1-second pulses, until the mixture resembles rice.

    Add the riced cauliflower, chicken stock (or water), two tablespoons of the butter, and a bit of salt and pepper, to a saucepan over medium-low heat.

    Chef's Tip: I you elect to use raw, rather than baked, garlic. Then smash it with the flat end of a kitchen knife and add it to the saucepan to cook. If it is baked garlic, then add it at step 7, along with the remainder of the ingredients.

    Cook over low heat until the cauliflower begins to soften, about 15 – 20 minutes.

    Add the remainder of the ingredients, and stir to combine. Do not forget the other 2 tablespoons of butter.

    Return the mixture to the food processor, and process at high speed until the mixture is smooth, and resembles mash potatoes.

    Serve with your favorite protein, or just eat them on their own. I usually add a pat of butter, and a sprinkle of salt and pepper. Enjoy.
