I came up with this side for tonight’s dinner of grilled T-bone steaks. They are cubed golden potatoes, with a tangy/spicy sauce that stands up to something like a big T-bone. So yummy. So, you ready… Let’s get into the kitchen.

2 Tbspwater

2 Tbsptamari sauce, or liquid aminos

2 Tbspfresh clover honey

1 Tbspolive oil, extra-virgin variety

1 mdleek, cut into rounds, the white part

10 ozgolden potatoes, peeled and cut into a 1/2-inch (1.5cm) dice

1/4 tspchili powder, hot or mild, your choice

1/4 tspwhite pepper, freshly ground

1 pinchhungarian paprika

1 clovegarlic, minced

2You can peel the potatoes, or leave them natural. In most cases, I like to leave the skins on.

3Gather your Ingredients (mise en place).

4Add the water tamari, honey, olive oil, leeks, and the potatoes in a saucepan, and then place over medium-high heat.

5Cover, and let boil for about 4 – 5 minutes, or until the potatoes are almost cooked.

6Add the remaining ingredients, and turn the heat down to low, low (just to keep them warm until serving).

8I like serving these potatoes with beef; however, you could experiment with other proteins. Sometimes, I will make them, and just eat them all by themselves. Enjoy.
