This is an easy salad to put together… the hardest part is shredding the carrots. The spices compliment the carrots and work with a variety of items, such as: beef, pork, fish, and chicken. As a matter of fact, you could put together a bowl and eat it all by itself. So, you ready… Let’s get into the kitchen.

    carrots, peeled and grated
  • 1 md
    jalapeno, seeded and chopped
  • 1/2 c
    dried cranberries
  • 1/4 c
    fresh parsley, chopped
  • 3 Tbsp
    olive oil, extra virgin variety
  • 3 Tbsp
    lime juice, freshly squeezed
  • 2 Tbsp
    rice wine vinegar, non-flavored
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • sugar, to taste
