side essentials: baked broccoli, two ways

I like all kinds of veggies; however, broccoli has got to be near the top of the list. Stovetop, baked, cooked, or served raw on a veggie platter with dips, you just cannot beat it. This recipe is baked in a cast iron pan and gives you two yummy ways to spice it up. This stuff is good enough to grab a fork and just eat it out of the skillet as soon as it comes out of the oven. So, you ready…Let’s get into the kitchen.

Ingredients For side essentials: baked broccoli, two ways

  • PLAN/PURCHASE
  • 1 lg
    stalk broccoli, about a dozen florets (give or take)
  • MIX #1
  • 1 Tbsp
    olive oil, extra-virgin variety
  • 1 Tbsp
    sweet butter, unsalted, room temperaturegarlic, minced
  • 1 - 2 clove
    garlic, minced
  • 1/2 tsp
    salt, kosher variety, fine grind
  • 1/4 tsp
    white pepper, freshly ground
  • parmesan cheese, freshly grated, as needed
  • MIX #2
  • 1 Tbsp
    sweet butter, unsalted
  • 2 tsp
    tamari sauce, or liquid aminos
  • 2 tsp
    toasted sesame oil
  • 1 Tbsp
    fresh clover honey
  • 1 tsp
    sriracha sauce, or to taste
  • 1/4 tsp
    black pepper, freshly ground
  • toasted sliced almonds, as needed

    You will need an ovenproof pan or cast-iron skillet to make this recipe. My preference would be cast iron.

    You can add more than broccoli to this recipe. Maybe peas, or diced carrots? Have some fun with it.

    Gather your ingredients (mise en place).
  • 5
    Place a rack in the upper-middle position and preheat the oven to 350f (180c).

    Chop up the broccoli.
  • 7
    Mix #1 Toss with all the ingredients, except the parmesan cheese, and add to the pan. Add to the preheated oven and bake until the tips of the florets are slightly browned and crispy, about 18 – 20 minutes. Sprinkle with the parmesan before serving.

    Mix #2 Toss with all the ingredients, except the toasted sliced almonds, and add to the pan. Add to the preheated oven and bake until the tips of the florets are slightly browned and crispy, about 18 – 20 minutes. Sprinkle with the toasted almonds before serving.
