This is a side dish that is easy/peasy to assemble, and has great flavor. It is carrots, bacon, honey, and a few other bits-and-bobs. There is just a whisper of honey... just enough to add some sweetness, and balance out the flavors of the carrots and honey. So, you ready… Let’s get into the kitchen.

Ingredients For side dish essentials: roasted carrots with bacon

  • PLAN/PURCHASE
  • 1 1/2 lb
    carrots, cut on the diagonal, about 1/2-inch (1.5cm)
  • 1 Tbsp
    olive oil, extra virgin
  • 1/8 tsp
    ground cinnamon
  • 3 slice
    bacon cut into 1/2-inch pieces, and partially cooked
  • 1 Tbsp
    fresh clover honey
  • 1 Tbsp
    fresh parsley, chopped
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste

How To Make side dish essentials: roasted carrots with bacon

    PREP/PREPARE

    Cook the bacon, just long enough to render the fat.

    Gather your Ingredients (mise en place).
  • 4
    Place a rack in the middle position, and preheat the oven to 400f (205c).

    Cut the carrots up.
  • 6
    Toss with the olive oil, bacon, and cinnamon, then place into a baking pan, or dish. Add a bit of salt and pepper, to taste.

    Add to the oven, and cook until the carrots are tender, about 25 – 30 minutes.
