Ingredients For shrimp salad - stuffed tomatos

    peeled cooked shrimp 21-25 per lb.(tail cut)
  • 1 stick
    celery finely chopped
  • 1/4 c
    basil finely chopped
  • 10
    kalamata olives chopped
  • 1 md
    shallots minced
  • 2 Tbsp
    mayonaise (reduced fat)
  • 1 Tbsp
    white wine vinegar
  • 1 pinch
    freshly ground pepper
  • 4 lg
    ripe tomato (cored)
  • 1 Tbsp
    fresh dill chopped (for garnish)
  • 1 Tbsp
    capers (for garnish

How To Make shrimp salad - stuffed tomatos

    Combine shrimp, celery, basil, olives, shallot, mayonnaise, vinegar and pepper in a medium bowl. Stir to combine.

    Carefully hollow out the inside of each tomato using a melon baller or small spoon; reserve the scooped tomato for another use. To serve, fill each tomato with a generous 1/2 cup of the shrimp salad. Then garnish with chopped dill and capers.
