Something about this mix just worked!!! All the veggies came from the farmers market except the carrots & onion.

Ingredients For sheet pan roast veggies

carrots, julienned

baby potatoes
-
zucchini, chopped
-
summer squash, chopped
-
red pepper, chopped
-
red onion, chopped

olive oil, extra virgin

italian seasoning
-
garlic powder
How To Make sheet pan roast veggies

1All amounts are up to you. Depends how hungry you are and which veggies you like the most & have in your kitchen.

2Use other veggies if you want.

3Chop veggies into pieces.

4Toss with olive oil.

5Sprinkle with a little bit of garlic powder & Italian seasoning.

6Spread on a jellyroll pan. (I line with tin foil and spray with oil.)

7Bake at 350 degrees F until all veggies are done. Usually takes mine 30-45 minutes.

8Sometimes, the potatoes need to be parboiled or microwaved.
