I honestly don't know when or how I came by this recipe but it is a great side dish!

Ingredients For scalloped zucchini

  • COMBINE:
  • 1 c
    bisquick
  • 1/2 c
    vegetable oil
  • 4 lg
    eggs
  • 1/2 tsp
    salt
  • AFTER MIXING WELL, ADD:
  • 1/2 c
    finely chopped onion
  • 1/2 c
    grated cheese (your choice!)
  • 3 c
    thinly sliced zucchini

How To Make scalloped zucchini

  • 1
    Mix everything together until it is well combined and pour into a greased 10 inch pie pan. (The original recipe used a greased 9x13 but I prefer the pie pan.)

    Bake at 350 degrees for 30 minutes. It can sit on the counter for a few minutes and cool a bit before you serve it. You can cut it in wedges or just spoon it out.
