I honestly don't know when or how I came by this recipe but it is a great side dish!

Ingredients For scalloped zucchini
- COMBINE:

1 cbisquick
-
1/2 cvegetable oil

4 lgeggs

1/2 tspsalt
- AFTER MIXING WELL, ADD:

1/2 cfinely chopped onion

1/2 cgrated cheese (your choice!)

3 cthinly sliced zucchini
How To Make scalloped zucchini

1Mix everything together until it is well combined and pour into a greased 10 inch pie pan. (The original recipe used a greased 9x13 but I prefer the pie pan.)

2Bake at 350 degrees for 30 minutes. It can sit on the counter for a few minutes and cool a bit before you serve it. You can cut it in wedges or just spoon it out.
