Ingredients For scalloped eggplant

1 mdeggplant

1egg
-
1/2 cmilk
-
2 1/8 Tbspmelted butter or margarine

1 smonion, chopped
-
1 cdry bread crumbs or cracker crumbs

1/2 cbuttered crumbs

1 1/8 canmushroom soup
How To Make scalloped eggplant

1Peel & pare eggplant. Cut in 1 inch cubes. Cook in boiling salt water for 8 minutes; drain. Add eggs, milk, butter, onions, dry bread crumbs and mushroom soup. Place mix in a greased 1 1/2 quart baking dish. Top with buttered crumbs. Bake in a 350 degree oven for 30 minutes.
