Ingredients For scalloped eggplant

  • 1 md
    eggplant
  • 1
    egg
  • 1/2 c
    milk
  • 2 1/8 Tbsp
    melted butter or margarine
  • 1 sm
    onion, chopped
  • 1 c
    dry bread crumbs or cracker crumbs
  • 1/2 c
    buttered crumbs
  • 1 1/8 can
    mushroom soup

How To Make scalloped eggplant

  • 1
    Peel & pare eggplant. Cut in 1 inch cubes. Cook in boiling salt water for 8 minutes; drain. Add eggs, milk, butter, onions, dry bread crumbs and mushroom soup. Place mix in a greased 1 1/2 quart baking dish. Top with buttered crumbs. Bake in a 350 degree oven for 30 minutes.
