my mother- in -law had a stroke, she lost her appetite for a little while and lost wgt. We grow our own garden every year, and i thought she would enjoy a squash casserole, i tried coming up with my own recipe and she loved it so much that i made her one a week for the last 6 months, she has regained her wgt. and swears by this casserole, she hasnt grown tired of it yet

Ingredients For savory squash caserole

  • 5 sm
    yellow squash
  • 1 sm
    onions, small white
  • 1 box
    stuffing mix, chicken or turkey flavored
  • 1 c
    cheddar cheese, shredded
  • 2
    eggs
  • 1 Tbsp
    butter
  • pinch
    salt and pepper

How To Make savory squash caserole

  • 1
    cut squash and onion into small chunks,cover with water boil until well done,add butter,drain leaving a little liquid,put in mixing bowl
  • 2
    add well beaten eggs,stuffing mix,cheese, salt, pepper,pour mixture into,med lightly greased(i use pam) casserole bakingdish bake at 325 degrees for about35 mins or until golden brown

    make sure you mash the squash after boiling,not to mushy
