I find some squash is hard to peel, but this recipe dispenses with that step. Just cook the rings with the peel on. It's very soft once cooked.

If you have never tried delicata squash, this recipe is your sign to try it. Being slightly buttery and sweet, it is similar to butternut squash but much lighter and less dense. In the cooking process, the delicata squash slightly caramelizes. You can eat the skin, but it easily peels off once cooked. A simple side dish when winter squash is in season.

  • 2 md
    delicata squash
  • olive oil
  • Kosher salt
  • black pepper
  • 3 lg
    shallots, minced and mixed with light oil
  • 1 Tbsp
    dried thyme

Make sure not to cut the shallots too small, or they will burn during the roasting process.
  • Oven preheating.

    Preheat oven to 400'F.
  • Removing seeds from the delicata squash.

    Cut the ends off the squash. Then, using a fillet knife, clean out the insides of the squash. Remove the stringy parts and the seeds.
  • Delicata squash cut into slices.

    Then cut them into 1/2" pieces. Try to be consistent. The rings will cook much better if they are the same size. If all the insides don't come out when you're using the knife, you can clean the rest out once they are cut in rings.
  • Pouring olive oil into a bowl with delicata squash.

    Put the rings in a large bowl and pour a good portion of olive oil on them; toss to coat.
  • Salt, pepper, shallot, and thyme added to the bowl.

    Add the salt, pepper, shallot, and thyme; toss again.
  • Slices placed on a baking sheet.

    Get yourself a large oven tray with sides and oil it using one of the squash rings (this works really well). Use the oil from the bowl, then put the rings on on the tray in one layer.
  • Baking the delicata squash.

    Put in the preheated oven and bake for 20-25 minutes. If you want, flip the rings over 1/2 way through the cooking process to ensure even browning. Serve along with rice or meat.
