Ingredients For sauteed zucchini and caramelized onions

1 Tbspextra virgin olive oil (or more if needed)

1 mdonion, sliced, or cut into thin wedges

1 pinchsugar

1 mdzucchini (or yellow squash or both)

1 lgtomato, chopped, optional

1 pinchred pepper flakes

salt and freshly ground black pepper, to taste
How To Make sauteed zucchini and caramelized onions

1In a large nonstick skillet, heat oil over medium-high heat. Add onion and cook, stirring, until transparent, about 5 minutes.

2Sprinkle with sugar; cook until onions are browned and caramelized, about 7 minutes, adding a sprinkle of water as necessary to prevent burning and sticking.

3Add zucchini to skillet. Saute until zucchini is tender, about 5 minutes.

4Add tomato, if using, and red pepper flakes.

5Cook until heated through and tomato begins to release its juice, about 3 minutes.

6Add salt and pepper to taste.
