Ingredients For sautéed peppers with tomatoes

  • 3
    bell peppers (any color) – sliced
  • 3
    tomatoes – quartered
  • 5 clove
    garlic – chopped
  • 1
    red onion - sliced
  • 1/2 c
    italian parsley – chopped
  • 1 tsp
    capers – chopped - plus tablespoon of juice
  • 3-4 Tbsp
    olive oil
  • spices – adjust to your liking:
  • 3/4 tsp
    salt
  • 1/4 tsp
    red pepper flakes
  • 3/4 tsp
    dried oregano
  • 1/4 tsp
    paprika
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    curry powder
  • 1/2 tsp
    black pepper

How To Make sautéed peppers with tomatoes

    Heat a large frying pan with 2 tablespoons of olive oil. Add the sliced peppers and onions and sauté until the onions are slightly golden. Add tomatoes, capers and spices and continue sauté until the tomatoes soften completely; this will take a few minutes, about 10 minutes or so. When the sauce has thickened add the chopped parsley, another clove of garlic chopped and a little drizzle of olive oil. Serve hot or cold.
