salmon and vegetable cheese sauce

Salmon is always a good choice to cook with something. I took some garlic, red bell peppers, spinach, baby portabello and goat cheese, and turned it into a cheese sauce. Then I topped with some parsley. This is another dish that is healthy but has a little yummy goodness to it. ENJOY!

Ingredients For salmon and vegetable cheese sauce

1 1/2 lbsalmon

3 clovegarlic
-
1lemon
-
salt and pepper

1 Tbspolive oil

1 lgred bell pepper

1 pkgspinach
-
1 pkgbaby portebello mushrooms

8 ozgoat cheese
-
1/4 cparsley
How To Make salmon and vegetable cheese sauce

1Season Salmon with salt, pepper and some lemon juice let sit until you cook everyhting else

2Take Olive Oil heat on med heat, add garlic cook for about 1 min or so

3Add Spinach salt and pepper to taste

4Cook spinach for about 5 to 7 min until wilted

5Add baby portabello and red bell peppers cook for another 6 to 8 min

6Add Goat cheese let cheese melt for about 4 min

7Add Salmon to the mix and cook for about 5 min each side

8Place salmon on plate top it off with the sauce and sprinkle parsley
