roated asparagus & vidalia onions

Everyone who has tasted this combination veggie LOVES it and request it again and again. This is a FAVORITE with my family and friends. I will update my photo after i actually remember to take a photo of the dish while Im preparing and cooking. sorry had to use stock photos.

Ingredients For roated asparagus & vidalia onions

  • 2 bunch
    small firm asparagus (not wilted)
  • 1 tsp
    crushed garlic
  • 1 md
    vidalia onion
  • 1/2 tsp
    crushed black pepper
  • 3/4 tsp
    sea salt (optional)
  • 1/4 c
    extra virgin olive oil

How To Make roated asparagus & vidalia onions

    wash Asparagus cut up to 1 inch off bottom of stalks and discard
  • 2
    cut the stalks in half and toss in bowl
  • 3
    peel and cut the Vidalia in half then slice each half into 1/4 strips and toss into bowl with Asparagus
  • 4
    add the other ingredients (Garlic, Oil, salt & pepper)and toss into the bowl with the Asparagus and Onions. Toss entire contents until coated well.

    Pour bowl contents onto a deep wide bread pan and spread out onto pan. Place into oven set to BROIL. Broil for about 10 minutes at a time stirring in between until it is roasted and onions appear slightly translucent.

    Remove from Oven and using tongs or spatula, place the contents into a serving dish and Serve. You can add Lemon juice to your serving if you like.
