  • 1 1/2 lb
    parsnips, peeled and cut into thin strips
  • 1 1/2 lb
    carrots, peeled and cut into thin strips
  • 1/4 c
    olive oil
  • 1/4 c
    fresh sage leaves
  • kosher salt and black pepper

How To Make roasted parsnips and carrots with sage

  • 1
    Heat oven to 400 degrees. In a large bowl, toss the parsnips, carrots, sage, oil, salt and 1/2 t. pepper. Spread on a rimmed baking sheet and roast, stirring twice, until the vegetables are gilden, 45-55 minutes. Makes 8 servings.
