I love roasted veggies & the honey & orange juice along w/the butter and herbs give these veggies a most wonderful taste.

Ingredients For roasted, herbed carrots & potatoes

  • 4-6 lg
    carrots, washed, peeled and cut on a bias
  • 1-2 lg
    yukon potatoes, washed, cut into large pieces
  • 1 Tbsp
    honey
  • 1/2 Tbsp
    olive oil
  • 1 Tbsp
    fresh orange juice
  • pinch
    each of salt & pepper
  • 1 Tbsp
    melted butter
  • 1-1/2 tsp
    dried, crushed dill
  • 1 Tbsp
    dried, crushed parsley

How To Make roasted, herbed carrots & potatoes

    Heat oven to 425. Place foil on large baking sheet, spray lightly w/ cooking spray.

    In large bowl, whisk together the honey, oil and orange juice. Place carrots & potatoes on baking sheet. Drizzle all w/ honey mix.

    Sprinkle w/ salt & pepper. Roast 20-25 minutes or until carrots and potatoes have a slight crunch to them. In small bowl, Whisk the melted butter, dill & parsley. Pour over veggies, toss lightly to coat.
