I love roasted veggies & the honey & orange juice along w/the butter and herbs give these veggies a most wonderful taste.

Ingredients For roasted, herbed carrots & potatoes

4-6 lgcarrots, washed, peeled and cut on a bias

1-2 lgyukon potatoes, washed, cut into large pieces

1 Tbsphoney

1/2 Tbspolive oil

1 Tbspfresh orange juice

pincheach of salt & pepper
-
1 Tbspmelted butter
-
1-1/2 tspdried, crushed dill

1 Tbspdried, crushed parsley
How To Make roasted, herbed carrots & potatoes

1Heat oven to 425. Place foil on large baking sheet, spray lightly w/ cooking spray.

2In large bowl, whisk together the honey, oil and orange juice. Place carrots & potatoes on baking sheet. Drizzle all w/ honey mix.

3Sprinkle w/ salt & pepper. Roast 20-25 minutes or until carrots and potatoes have a slight crunch to them. In small bowl, Whisk the melted butter, dill & parsley. Pour over veggies, toss lightly to coat.
