Ingredients For roasted garlic cauliflower mash with ricotta

  • ROASTED GARLIC AND GARLIC OIL
  • 2
    heads garlic broken into cloves and cloves sliced
  • 2 c
    olive oil
  • MASH
  • 1
    head cauliflower broken into florets
  • 1 c
    full fat ricotta cheese
  • 4 Tbsp
    butter
  • 2 Tbsp
    each roasted garlic and garlic oil
  • fresh cracked pepper

How To Make roasted garlic cauliflower mash with ricotta

    For the Roasted garlic and garlic oil. Place the oil in a pan and bring to a boil. Reduce heat to low. Add the garlic pieces and simmer until garlic is browned. Strain the garlic pieces out of the oil and mash them. Let the oil cool.

    For the mash. Boil a large pot of salted water and add the cauliflower. Boil until the cauliflower is very soft. Drain.

    Place the cauliflower in a food processor. Add the ricotta, mashed garlic and garlic oil. Process until smooth. Top with fresh cracked pepper
