Ingredients For roasted cauliflower with walnuts and golden raisins

1/4 cextra virgin olive oil (or coconut oil)

4shallots, thinly sliced

4 clovegarlic, minced

2 tspground cumin, to taste more if needed

1-2 Tbsphoney

1 Tbspfresh lemon juice

1/4 tspcrushed red pepper flakes

1head cauliflower, cut into florets

salt and pepper, to taste

1/2 cwalnuts, chopped or whole

1/2 cgolden raisins
How To Make roasted cauliflower with walnuts and golden raisins

1Preheat oven to 400 degrees F.

2Melt oil in a skillet and add shallots - cook until softened; approximately 2-3 minutes. Add garlic and cook 1 minute more. Add cumin and allow spice to bloom in the oil for 30 seconds.

3Combine honey, lemon juice, and pepper flakes. Add it to the skillet. Stir to combine with the shallot mixture.

4Place the cauliflower in a 9 x 13 dish and pour skillet mixture over the cauliflower florets. Sprinkle with salt and pepper to taste and mix well. Make sure the cauliflower is spread out evenly.

5Bake cauliflower (stirring occasionally) until golden and tender; approximately 30 minutes. Just before baking ends, stir in walnuts and raisins.
