Ingredients For roasted cauliflower with walnuts and golden raisins

  • 1/4 c
    extra virgin olive oil (or coconut oil)
  • 4
    shallots, thinly sliced
  • 4 clove
    garlic, minced
  • 2 tsp
    ground cumin, to taste more if needed
  • 1-2 Tbsp
    honey
  • 1 Tbsp
    fresh lemon juice
  • 1/4 tsp
    crushed red pepper flakes
  • 1
    head cauliflower, cut into florets
  • salt and pepper, to taste
  • 1/2 c
    walnuts, chopped or whole
  • 1/2 c
    golden raisins

How To Make roasted cauliflower with walnuts and golden raisins

    Preheat oven to 400 degrees F.

    Melt oil in a skillet and add shallots - cook until softened; approximately 2-3 minutes. Add garlic and cook 1 minute more. Add cumin and allow spice to bloom in the oil for 30 seconds.

    Combine honey, lemon juice, and pepper flakes. Add it to the skillet. Stir to combine with the shallot mixture.

    Place the cauliflower in a 9 x 13 dish and pour skillet mixture over the cauliflower florets. Sprinkle with salt and pepper to taste and mix well. Make sure the cauliflower is spread out evenly.

    Bake cauliflower (stirring occasionally) until golden and tender; approximately 30 minutes. Just before baking ends, stir in walnuts and raisins.
