How To Make red curry peanut butter cauliflower steaks

1Preheat oven 400 degrees. Spray a cooking sheet. Trim the cauliflower of green leaves leave the stem intact. Cut 1 inch steaks cutting straight down through the stem. Save the remaining cauliflower for another use. You should be able to get about 4 steaks depending on how large the head of cauliflower.

2Place the cauliflower on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast about 25 to 30 minutes. Until the cauliflower is tender and edges browned.

3Meanwhile make the sauce. Place all the ingredients for the sauce together is a saucepan and whisk constantly until is boils then reduce heat and simmer 5 minutes.

4Serve the sauce with the cauliflower steaks and grnish with mint.
