Ingredients For ratatouille

1 Tbspolive oil

1onions, yellow, medium
-
1diced red bell pepper
-
1eggplant
-
2zucchini
-
2garlic cloves, chopped
-
4diced tomatoes
-
2 tspfresh oregano leaves

to taste salt/pepper

1/2 cshredded parmesan, roman,asiago cheese
How To Make ratatouille

1Over medium-high heat, preheat a large pan, add olive oil and onion, and saute until onion turns translucent ( about 3 minutes).

2add the pepper, cook for another 2 minutes. Add zucchini and eggplant and cook an additional 2 minutes, stirring occasionally.

3Add sthe chopped garlic, stisr, cook for 1 minute, then add the tomatoes and oregano. reduce heat to low, season with salt and pepper, cover and simmer until the vegetables are tender but not soft (10minutes). sprinkle 1/2 of shredded cheese. enjoy!!!!
