Ingredients For quinoa with sautee'd peppers & black beans

2 clovegarlic, chopped

1 smonion, chopped

1 cquinoa, cooked
-
1 canblack beans, drained

1red or green pepper
-
1 Tbspolive oil

2 Tbspvegetable broth
How To Make quinoa with sautee'd peppers & black beans

1Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.

2Meanwhile: Chop onions, Garlic & pepper. Keep separate.

3Brown the garlic. Add onions & Peppers. Sautee until tender.

4Add vegetable broth. Simmer to cook peppers down.

5Add black beans.

6Stir in cooked quinoa.
