This protein-packed quinoa is toasted, then cooked until tender with sweet peppers and garlic for a hearty side dish or add some meat or seafood for the main dish! This dish is from Swanson Vegetable Broth. I think this is another great way to use quinoa other than in a salad.

Ingredients For quinoa pepper pilaf

1 Tbspolive oil

1shallot, minced

2 clovegarlic, minced

1 cred bell pepper, diced

1 cyellow bell pepper, diced

1 cuncooked quinoa, rinsed several times

2 cswanson vegetable broth

2 Tbspchopped fresh parsley
How To Make quinoa pepper pilaf

1Heat the oil in a 2 quart saucepan over medium-high heat. Add the shallot and garlic and cook for 2 minutes, stirring occasionally. Add the peppers and quinoa and cook for 2 minutes, stirring every once in awhile.

2Stir in the broth and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the quinoa is tender and the liquid is absorbed. Stir in the parsley. Season , if desired.

3Note: For the main dish add: some sweet potato cut into bite size pieces some chicken -cut in bite size pieces some peas Salt & pepper Some fresh cilantro chili pepper chopped from jar
