If you want a quick and flavorful yellow squash side dish, this is it! Takes a few minutes and is not your momma's mushy stewed squash! Everyone who complains about summer squash LOVES this!

A wonderfully quick and easy summer side dish. The summer squash is tender. We loved the sweet carrots and slightly caramelized onions. Balsamic vinegar adds a slight tang to the dish. A delicious way to enjoy summer squash.

Ingredients For quick sauteed summer squash

  • 3 lg
    summer squash
  • 2 lg
    carrots
  • 1 lg
    sweet onion
  • 3-4 Tbsp
    balsamic vinegar
  • 2 Tbsp
    olive oil
  • 1-2 tsp
    Lawry's seasoning salt
  • 1 tsp
    cracked black pepper
  • 1 dash
    garlic powder

How To Make quick sauteed summer squash

  • Squash and onion sliced.

    Slice yellow squash and onion in 1/2, slice, and halve.
  • Carrots sliced thin.

    Use a mandolin and slice the carrots into thin slices.
  • Veggies and spices tossed together.

    Mix all veggies together and add spices.
  • Heating oil.

    Heat olive oil in a skillet (I use a copper wok on a gas range).
  • Cooking veggies in the hot oil.

    When very hot, add veggie mixture and pan fry until brown but not soft.
  • Balsamic vinegar and remaining spices added to summer squash.

    Add balsamic vinegar and keep tossing until tender but not mushy. Add salt, garlic powder, and pepper until the desired flavor.
