Mama called these "bread & butter pickles". I call em Quick Pickles cuz they never last long & are quick to make.

Ingredients For quick pickles

  • 1 1/4 lb
    cucumbers,peeled(or not) & cut into 1/4in. slices
  • 1/2 tsp
    salt
  • 1 c
    each cider & white vinegar
  • 1 c
    brown sugar, light
  • 1 1/2 c
    slivered onions
  • 2
    garlic cloves,slivered
  • 1 tsp
    dill seed
  • 1 tsp
    mustard seed

How To Make quick pickles

  • 1
    Place cucumber slices in a colander set in the sink.Sprinkle with salt and stir to make sure all slices are covered.Let stand 20 min.

    Meanwhile,combine the rest of ingredients in a saucepan.Bring to a boil,reduce heat and simmer for 10 min.

    Rinse,drain and transfer cucumbers to a heatproof bowl.Pour hot liquid over the cucumbers;stir to combine.Put in fridge at least 10 min. to bring to room temp. before trying to eat.

    May be covered and refrigerated for up to 10 days.If they last that long.
