These are so good! I had made them before with zucchini, but used one of my pie pumpkins from my garden, delicious! Recipe from " Closet Cooking"

Ingredients For pumpkin and feta fritters

2 cpumpkin/squash (grated)

1/4 cfresh herbs (such as parsley, dill)

1green onion (sliced)

1/4 cfeta (crumbled)

1/2 cflour

salt and pepper to taste

2 Tbspoil, may need more
How To Make pumpkin and feta fritters

1Mix the pumpkin, herbs, green onion, feta, flour, egg, salt and pepper in a bowl.

2Heat the oil in a pan. Spoon the pumpkin mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.
