I've adopted this orphaned recipe, and will be making changes....so visit again soon and see what I've come up with. I may ask my Colombian daughter-in-law for some suggestions!
Ingredients For plantain casserole

2 lgplantains, green, sliced 1" thick

4 Tbsplemon juice

2 Tbsppeanut oil

1 lgtomato, peeled and chopped

pinchsalt

pinchpepper
How To Make plantain casserole

1Peel and slice plantains 1 inch thick; dip in lemon juice and saute them in oil over low heat, stirring constantly.

2Add tomato and seasoning and transfer to an oiled casserole dish with a lid. Bake at 275 for 1 hour.
