Coleslaw is a popular side dish in the Bahamas. This one does not use mayo.

Ingredients For pineapple slaw

2apples (red or green)

2 Tbspgreen peppers, chopped

1 smhead white cabbage, shredded

1 tspsalt

1 tspsugar

2 Tbspvinegar

4 Tbspcarrot, grated

6 slicefresh pineapple
How To Make pineapple slaw

1Core and chop unpeeled apples. Mix with green pepper and cabbage.

2Mix salt, sugar and vinegar until sugar is dissolved. Pour over cabbage mixture, sprinkle with carrot and top with pineapple.

3Serve immediately.
