I was making Caribbean Jerk Chicken with rice and needed a quick vegetable side dish from the vegetables I had available. The slight sweetness of the pineapple went great with the green beans, and the dish was the perfect compliment to the meal. I think if the green beans were to "marinate" a little longer in the pineapple juice before serving, it would be even better. My husband really liked it, and he is quite the picky eater.

Ingredients For pineapple green beans

1 cangreen beans
-
1 canpineapple chunks (in juice)

2 tspmargarine or butter

1-2 Tbspbrown sugar

1 dashsalt
How To Make pineapple green beans

1Drain liquid from green beans, then pour the green beans into a microwave safe bowl.

2Pour about 1/2 cup of pineapple juice from the can of pineapples into the bowl with the green beans.

3Chop about 1/4 cup pineapple chunks into smaller pieces and mix in with the green beans.

4Add the margarine (or butter), the brown sugar, and the dash of salt.

5Microwave on high for 3 minutes. Carefully stir with a spoon or fork being careful not to mush up the green beans.
