Ingredients For peasant peppers

  • 3 lg
    green peppers, thinly sliced
  • 3 lg
    sweet red peppers, thinly sliced
  • 2 Tbsp
    olive oil
  • 1 1/2 tsp
    salt
  • 1 tsp
    pepper
  • 1/2 c
    bread crumbs

How To Make peasant peppers

  • 1
    Place peppers in two 15-in. x 10-in. x 1-in. baking pans. Drizzle with oil and sprinkle with salt and pepper; toss to coat.

    Bake at 400° for 30-35 minutes until tender and skins are slightly blackened. Sprinkle with breadcrumbs. Bake 15-20 minutes longer or until lightly browned. 3 points per serving
