This is a recipe that my Mom made on every holiday. It just didn't seem right if this wasn't on the table. Of course, I love it any time. It only takes a few minutes to put it together but requires a couple of hours chilling time. It is worth it. I found photos on the internet since I have not taken my own pictures.

Ingredients For pea salad

2 Tbspcelery, chopped

1 Tbspred onion, chopped

2 Tbspbell pepper, chopped, any color

1 tsppimiento, chopped

1 Tbspdill pickle relish

1 ccheddar cheese, diced

1 can(17 oz) english peas, drained

2eggs, hard boiled and chopped

2 Tbspmiracle whip salad dressing

2 cshredded iceberg lettuce
How To Make pea salad

1Combine first 6 ingredients and mix well.

2Add peas, eggs and mayonnaise and mix gently.

3Chill thoroughly (at least 2 hours).

4Just before serving, mix in lettuce. A little more Salad Dressing may be needed.

5Garnish with sliced, hard-boiled egg and sprinkle with paprika.
