I have been making this recipe for a very long time. Something about shredding the zucchini changes the flavor and it even appeals to the pickiest eater. I'm sure the parmesan cheese helps too. : )

6 smzucchini, shredded

2 Tbspbutter

6green onions, chopped

salt and freshly ground black pepper to taste

freshly ground nutmeg

1/4-1/2 cparmesan cheese, grated
How To Make parmesan zucchini

1Using a food processor or hand grater, grate zucchini. Drain on paper towels to absorb excess moisture.

2Place zucchini and green onions in a saucepan with melted butter on high heat until just heated through.

3Remove from heat and add salt/pepper, and nutmeg. Serve immediately and sprinkle with grated parmesan.
