Ingredients For parmesan and asiago cauliflower potato mash

  • 1 lb
    red skinned potatoes, peeled and halved
  • 1 lb
    cauliflower florets
  • 2 Tbsp
    roasted garlic, pureed
  • 1/2 c
    white wine
  • 1/2 c
    chicken broth
  • 1/4 c
    heavy cream
  • 2 tsp
    kosher salt
  • 2 Tbsp
    parmesan cheese, grated
  • 3 Tbsp
    softened, unsalted butter
  • pepper to taste
  • 3/4 c
    asiago cheese, grated

How To Make parmesan and asiago cauliflower potato mash

    In a 6 quart pot, combine potatoes, cauliflower, roasted garlic, wine, chicken broth, heavy cream and salt and simmer 15 to 20 minutes or until potatoes are cooked.

    Remove from heat. Mash potato and cauliflower until smooth. While still hot, mix in parmesan cheese, asiago cheese and butter. Season to taste with pepper.
