Ingredients For parmesan and asiago cauliflower potato mash

1 lbred skinned potatoes, peeled and halved

1 lbcauliflower florets

2 Tbsproasted garlic, pureed

1/2 cwhite wine

1/2 cchicken broth

1/4 cheavy cream

2 tspkosher salt

2 Tbspparmesan cheese, grated

3 Tbspsoftened, unsalted butter

pepper to taste

3/4 casiago cheese, grated
How To Make parmesan and asiago cauliflower potato mash

1In a 6 quart pot, combine potatoes, cauliflower, roasted garlic, wine, chicken broth, heavy cream and salt and simmer 15 to 20 minutes or until potatoes are cooked.

2Remove from heat. Mash potato and cauliflower until smooth. While still hot, mix in parmesan cheese, asiago cheese and butter. Season to taste with pepper.
