1 Tbspwater

1/3 cdry bread crumbs

2 Tbspgrated parmesan cheese

1/4 tspcayenne pepper

1/4 tsppepper

1large sweet potato (14 oz) peeled

2 Tbspolive oil
- MANGO CHUTNEY MAYONNAISE (OPTIONAL)

1/4 cmayonnaise
-
2 Tbspmango chutney
-
1/4 tspcurry powder

dash of salt
How To Make oven-fried sweet potatoes

1In a shallow bowl, whisk egg and water. In a resealable plastic bag, combine the bread crumbs, Parmesan cheese, cayenne and pepper.

2Cut potato into 1/4-inch strips. Add to egg mixture, a few at a time and toss to coat. Add to the crumb mixture, a few at a time; seal bag and shake to coat.

3Arrange potato strips in a single layer on a baking sheet coated with non-stick cooking spray; drizzle with oil.

4Bake at 450 degrees for 25-30 minutes or until golden brown.
