1 corzo pasta, uncooked

2garlic cloves, smashed

1 Tbspolive oil

1 csnow peas

1 cspinach, fresh

2sun-dried tomatoes, julienned (sliced thin)

1/2 cParmesan cheese

To keep the Parmesan cheese from melting into clumps, remove the skillet from the heat and then add the cheese.

1Boil the orzo according to the package for about 8 mins. Drain & set aside.

2In a skillet, add the olive oil and garlic (don't brown) on low heat for about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, and cover until the Parmesan melts about 5 mins. Add salt/pepper to taste. Enjoy as a side... or a meal.... YUM.
