This orzo salad is big on flavor and oh so good. We liked the sweetness of the snow peas and fresh spinach. Sun-dried tomatoes give the salad a touch of tartness. Easy to make and perfect for spring, you can enjoy this as a side dish or a main meal.

Ingredients For orzo w/ snow peas, spinach & sun-dried tomatoes

  • 1 c
    orzo pasta, uncooked
  • 2
    garlic cloves, smashed
  • 1 Tbsp
    olive oil
  • 1 c
    snow peas
  • 1 c
    spinach, fresh
  • 2
    sun-dried tomatoes, julienned (sliced thin)
  • 1/2 c
    Parmesan cheese

To keep the Parmesan cheese from melting into clumps, remove the skillet from the heat and then add the cheese.
  • Draining cooked orzo.

    Boil the orzo according to the package for about 8 mins. Drain & set aside.
  • Olive oil, garlic, spinach, snow peas, sun-dried tomatoes & Parmesan cheese in a skillet.

    In a skillet, add the olive oil and garlic (don't brown) on low heat for about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, and cover until the Parmesan melts about 5 mins. Add salt/pepper to taste. Enjoy as a side... or a meal.... YUM.
