Orzo pasta is a delicious rice like pasta that is very light in flavor and texture. This dish is a very pleasant substitute for a rice side or main dish.

Ingredients For orzo primavera

  • 1/2 box
    orzo pasta
  • 4 oz
    fresh broccoli
  • 4 oz
    baby carrots
  • 2 oz
    parsnips
  • 1 oz
    fresh basil (shredded)
  • 4 oz
    sun dried tomatoes (strips)
  • 6 oz
    grilled chicken or shrimp (optional)
  • extra virgin olive oil
  • garlic, salt, white pepper and Italian seasoning to taste

How To Make orzo primavera

  • 1
    Boil the Orzo pasta in salted water according to the packages instructions, about 5-6 minutes, drain and set aside.

    Prepare fresh broccoli, carrots and parsnips for sauteing in olive oil. Season with the spices.

    Combine the vegetables, sun dried tomatoes and basil to the pasta.

    The optional meat can also be added to make this a main dish.
