Since my favorite cornbread recipe calls for a cup of creamed corn, and I have no way of knowing if a can of corn contains genetically modified corn (85% of all corn in the US food chain is genetically modified to contain pesticide in its DNA) I use this recipe to make my own creamed corn from certified organic NON-GMO corn.

Ingredients For organic non-gmo southern style creamed corn

8ears of certified organic non-gmo corn

2 Tbspcane sugar
-
1 Tbsporganic all-purpose flour
-
1 ccertified organic heavy cream
-
1/2 ccold water
-
2 Tbspbacon grease from sulfite free bacon
-
1 Tbsporganic butter
-
salt to taste
-
pepper to taste
How To Make organic non-gmo southern style creamed corn

1In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.

2Whisk together sugar and flour, add salt and pepper to taste. Combine with corn. Add the heavy cream and cold water. Mix.

3In a large skillet over medium heat, heat the bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy (about 30 minutes)

4Add the butter right before serving
