Since my favorite cornbread recipe calls for a cup of creamed corn, and I have no way of knowing if a can of corn contains genetically modified corn (85% of all corn in the US food chain is genetically modified to contain pesticide in its DNA) I use this recipe to make my own creamed corn from certified organic NON-GMO corn.

Ingredients For organic non-gmo southern style creamed corn

  • 8
    ears of certified organic non-gmo corn
  • 2 Tbsp
    cane sugar
  • 1 Tbsp
    organic all-purpose flour
  • 1 c
    certified organic heavy cream
  • 1/2 c
    cold water
  • 2 Tbsp
    bacon grease from sulfite free bacon
  • 1 Tbsp
    organic butter
  • salt to taste
  • pepper to taste

How To Make organic non-gmo southern style creamed corn

    In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.

    Whisk together sugar and flour, add salt and pepper to taste. Combine with corn. Add the heavy cream and cold water. Mix.

    In a large skillet over medium heat, heat the bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy (about 30 minutes)
