I learned a version of this recipe in Home Economics Class, many years ago...I created this one, I added the addition of bacon, as bacon is good anytime. I used vadalia onions, but can use any sweet onion...so good!

1 cflour

1/4 tspeach - salt & onion powder

2 tspbaking powder

5 Tbspbutter, divided

7 mdonions, sliced thin...my mandolin makes short work of it

Pinchdried thyme

1 cshredded cheese, your choice , i use cheddar

1egg
-
1 1/2 cmilk
-
1/2 tspmustard
-
6 sliceprecooked bacon

Salt& pepper to taste
How To Make ~ onion lovin brunch cake ~

1Slice onions, trying to keep all about the same thickness , a mandolin works great and is so quick. Over medium heat, in a large skillet, melt butter and add onions and pinch of thyme, can also lightly salt if you wish. Saute until lightly browned, stirring frequently.

2Sift flour, salt, onion powder and baking powder together. Cut into flour, 3 tablespoons, butter, until crumbly. Into this add 1/2 cup milk, beat with a fork, just until incorporated, about 18 strokes. Spray an 11 x 7 baking dish with nonstick cooking spray. Spread out batter evenly in bottom of dish. I lightly spray the top of batter and use an offset knife for this, whatever's easiest for you.

3Preheat oven to 450 degree F. Spread onions evenly over batter and then sprinkle with cheese.

4Mix egg and mustard with milk, beating well. Pour over onions and cheese. Top with bacon.

5Bake for 25 - 30 minutes. Don't overcook. Let set up for 5 minutes, then cut into squares. Salt and pepper if desired. Enjoy this scrumptious dish.
