Ingredients For onion cheese casserole

2 cups finely crushed ritz crackers, about 45 crackers, divided

1/2 cup margarine, divided

3 lbs. onions, thinly sliced

2 tbsp. flour
-
1/2 tsp. salt
-
`1/2 tsp. pepper
-
2 cups milk
-
1/2 lb. velveeta cheese, cut into small pieces
-
sweet red pepper, cut into rings
-
fresh jalapeno pepper to garnish
How To Make onion cheese casserole

1Preheat oven to 350. Spread 1 cup Ritz cracker crumbs in greased 8 x 11 inch baking dish.

2In large skillet, melt 1/4 cup butter over medium high heat. Add onions and cook til tender. Spoon onions over cracker crumbs.

3In same skillet, melt remaining 1/4 cup butter over medium high heat. Stir in flour, salt and pepper. Cook 1 minute

4Gradually stir in milk, stirring constantly and cook til thickened. Add cheese; stir til smooth, then pour cheese mixture over onions

5Sprinkle remaining 1 cup cracker crumbs over cheese mixture. Bake 25 to 30 minutes or til lightly browned. Garnish with red pepper rings and jalapeno peppers. Serves 12
