Home alone this weekend,and craving Okra or lady finger,which is messy initially to prepare,but once you learn the trick,it is easy as.Okra is readily available in Dubai and they are cheap as chips.I normally clean and flash freeze before bagging them in portion size zip lock freezer bags.This recipe is simple but very flavorful.

Ingredients For okra/lady finger

500 gokra, fresh chopped

2 mdchilies, green sliced vertically

3 Tbspgrapeseed oil /canola

1 tspcoriander seeds, ground

1 tspcumin seeds, ground

1/2 tspturmeric , ground

1 tspsalt

3curry leaves
-
1 tsplemon juice, fresh
How To Make okra/lady finger

1wash and wipe dry okra/lady finger thoroughly using a tea towel.

2chop/slice

3heat oil in heavy frying pan with lid.

4add curry leaves.

5stir in the spices.

6lower heat and allow to cook for 10 minutes, stirring continually.

7serve okra/lady finger with flat bread and a side of fresh yogurt.

8Note Okra/lady finger emits a sticky substance when it comes into contact with water — therefore always wash and dry thoroughly before chopping. Avoid adding water to the cooking process,always cover the frying pan for a few minutes when cooking.
