norma's zucchini chips

My garden always over flows with Zucchini and I love to make different recipes with them. This is one that I like a lot because it is low calorie and taste so good. For those that are not on a diet; you can add parmesan cheese to breadcrumbs and while hot out of the oven you can dip them in your favorite pizza sauce.

Ingredients For norma's zucchini chips

  • 1/2 c
    italian seasoned breadcrumbs
  • 1/8 tsp
    salt
  • 1/8 tsp
    pepper
  • 1 lg
    zucchini, cut into 1/4 inch slices
  • 3 lg
    egg whites, lightly beaten
  • cooking spray

How To Make norma's zucchini chips

    Preheat oven to 475
  • 2
    Place breadcrumbs in a shallow dish
  • 3
    Sprinkle salt and pepper evenly on zucchini slices
  • 4
    Dip zucchini slices into egg whites and place in breadcrumbs, pressing firmly to coat.

    Place zucchini slices on a baking sheet coated with cooking spray
  • 6
    Place in oven and bake for 10 minutes or until browned
  • 7
    Remove from baking sheet unto a platter and serve hot.
